Chocolate Cherry Walnut Truffles

By using 70% cacao dark chocolate, sweetened with dried dates and cherries, we create a bite-sized treat that will satisfy your sweet tooth! You can coat the truffles with different toppings, such as coconut, cocoa or diced walnuts, to create assorted flavors. Your friends will appreciate receiving these as a homemade gift. Start with good quality chocolate and savor each bite!

  • 20 truffles

Ingredients:

  • 2 Tbsp boiling water
  • 2 oz dark chocolate (64 to 72% cacao content), very finely chopped
  • 1/2 cup walnuts
  • 1 Tbsp unsweetened cocoa powder
  • 1 cup dried dates, pitted and halved
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1/4 cup dried cherries, finely diced (preferably unsweetened)
  • Suggested Toppings: (2 Tbsp of total topping to coat each batch of truffles)
    • finely shredded coconut (preferably unsweetened)
    • unsweetened cocoa powder
    • walnuts, finely diced

Instructions:

  1. Stir the boiling water into the chopped chocolate and let it stand for 30 seconds. Using a small whisk, stir until the chocolate is completely melted and glossy.
  2. Coarsely grind the walnuts in a food processor, then add the cocoa powder, dates, vanilla, and salt; process for a minute. The mixture will have a “coarse crumb” appearance.
  3. Add the melted chocolate to the mixture and process until smooth, another minute.
  4. Transfer to a bowl and stir the cherries into the chocolate mixture.
  5. Cover and chill for approximately 2 hours in the refrigerator, or 10-15 minutes in the freezer until firm.
  6. With a small scoop, scoop out approximately 2 teaspoons of the chilled chocolate mixture. Roll it into a smooth ball between your palms. Place the truffle in a paper cup in a mini-muffin pan to keep it in place. Repeat with the remaining mixture- you should yield about 20 truffles.
  7. To coat the truffles, place the desired topping(s) in a small bowl. Roll each truffle in the topping to coat. Place the truffles in an airtight container and chill thoroughly before serving.
