Key Lime Mousse

This dessert is like a deconstructed key lime pie. It's made with fresh lime juice, avocado and banana, and it's placed atop a crust of graham cracker crumbs, coconot, walnuts and dates. You can prepare the crust ahead of time, but the mousse should be made just prior to serving, as the avocado and banana will turn brown once exposed to air.

Ingredients

Crust

  • 1/4 cup graham cracker crumbs
  • 3 tbsp unsweetened coconut
  • 1/4 cup walnuts
  • 1/4 cup dates, pitted and diced (about 6 whole dates)
  • 1/8 tsp salt

Mousse

  • 1 avocado, peeled and pitted
  • 1 ripe banana
  • 2 tbsp lemon juice
  • 1/4 cup lime juice
  • 1 tbsp lime zest (about 1 lime)
  • 4 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1/8 tsp salt

Instructions

  1. Place the graham cracker crumbs, coconut, walnuts, dates and salt into a food processor, and mix until combined and crumb-like. Do not overprocess; it should look like coarse bread crumbs.
  2. Place the avocado, banana, lemon juice, lime juice, lime zest, maple syrup, vanilla extract and salt into a blender and puree until creamy.
  3. To assemble, place 2 tablespoons of the crust mixture into 4 individual serving dishes; gently pat down. Spoon 1/3 cup of the mousse mixture on top of the crust. Sprinkle 1 teaspoon of the remaining crumb mixture on top of the mousse. Serve immediately.
